Sweet Potato & Chicken (burgers, empanadas, taco filling)

I was going to try to make sweet potato burgers from a recipe I saw on twitter. Well, I went to get the ingredients and the grocery store was chock full of crazy people. So I grabbed what I thought I needed, and jumped ship!

Needless to say, I missed out on quite a few ingredients. Soooo.. I made up my own recipe & decided to make empanadas because I have dough discs left from the last time I made empanadas (& I forgot hamburger buns).

  • 1 lb ground chicken
  • 1 sweet potato, cooked & mashed
  • 1/4 cup whole wheat bread crumbs
  • 1 can cannellini beans, drained
  • 1 dash of sundried tomato seasoning (Tastefully Simple)
  • 2 tbs Sabra Supremely Spicy hummus
  • 1 egg white
  • 1 tbs EVOO
  • 10 Goya dough discs

In a bowl mash up the chicken, sweet potato, bread crumbs, beans, seasoning, hummus. 

Coat pan with EVOO

Brown the mixture for about 10 minutes on medium heat.

Put the mixture in the crockpot on low for 4 hours

Pre heat oven to 400 degrees

Fill the dough discs with about 2 spoonfuls of mixture, fold over & seal w/ fingers or a fork.

Once all of the empanadas are on your baking sheet, coat them in egg white. 

Bake 12-15 minutes

It’s about 650 calories for 3 empanadas, I figured.

Now, I have never made this before. But they smell delicious. I’ll post pics & a review later.
